BirBakingCo will be conducting a series of small-scale, skill-development workshops in Bir, Himachal Pradesh between January and April 2026.
These workshops are part of ongoing collaboration with Savdina’s The Local Store and form a component of the business development activities planned for the 2025–2026 season.
The purpose of the workshops is to provide training, demonstrations, and product development sessions in the field of artisan baking and sourdough-based production.
1. Introductory Session (January 2026)
A short informational session covering:
Basic understanding of sourdough fermentation
Introduction to starter maintenance
Demonstration of dough handling
Use of local speciality flour sourced from Raw Himalaya Mill (Bhunta, HP)
This introductory session supports community engagement and initial product-testing.

Sourdough starter care and hydration control
Dough mixing, folding, shaping and baking
High-altitude fermentation techniques
Introduction to laminated doughs (croissants, enriched doughs)
Small-batch production methods suitable for cafés and local shops
